Food for Thought: Reduce Arthritic with Tai Chi

Arthritis affects 1.5 million Tennesseans and is the leading cause of disability in the United States. It is a chronic disease that targets the joints of the body. Common symptoms include joint pain, aching, stiffness, and swelling. Though arthritis tends to be debilitating, it can be effectively managed through a variety of methods. There is growing evidence that low-impact, slow motion exercise is an essential tool in relieving arthritic pain and fatigue.

Beginning on March 24, University of Tennessee Extension Smith County will be offering an Arthritis Foundation Tai Chi Program. The 6-week program is designed for people with arthritis to reduce pain and stiffness, help maintain or improve mobility, muscle strength, memory, and balance. Individuals of all ages and mobility levels can benefit from this low-impact course. Classes will be held every Thursday at 9:00 a.m. for one hour at the Smith County Chamber of Commerce. The cost of the course is $48.00.

Potato Soup

8-10 medium potatoes, cubed

1 small onion, chopped and sauteed

1 can cream of chicken soup

1 can cream of celery soup

4 oz cream cheese

4 oz Velveeta cheese

Salt, pepper, and garlic, to taste

Cover potatoes with water and boil until tender. Add onions, soups, and other ingredients. Stir until all ingredients are well blended. Heat thoroughly on low heat. Submitted by Gale Burns, Carthage FCE Club.
